DELIS & SPECIALITY FOOD SHOPS

Deli opening and closing checklist

counters and shift continuity

Deli opening and closing checks work best when counter preparation, shared equipment and outstanding actions remain distinguishable. This guide uses practical record examples for a shop with several service areas.

Plan the routine around your site

Separate the routine by counter or station, including any food-preparation and shared wash-up areas. A closing submission should explain what the morning team will find, rather than only confirming that somebody locked up. Before service, review unresolved station findings and the required references to approved food-safety records. Define who owns shared equipment used by more than one counter so each team does not assume another has checked it. Allergen information and food handling remain governed by the business’s approved system. Use the operational checklist to record task outcomes and escalate exceptions to the responsible lead.

Agree the assigned role, due window, expected record and escalation route with the people who do and review the work. Include an honest outcome for work that could not be completed, with a reason and a next action.

What to include in the checklist

These are planning examples. Adapt the questions and timing to your approved procedures and the person’s responsibilities.

Shared equipment still needs one assigned routine

Assign the check to a named role and let other teams see its outcome. Duplicated vague ticks can leave each counter assuming the other has dealt with a defect.

Give the next shift enough context

A cracked accessible handle is found on shared service equipment before opening. The team follows the withdrawal procedure and records the asset so both counters see the same restriction. The closing team links the outstanding action to the next opening lead. The later replacement and verification are recorded against the same finding.

Identify the area or asset, the observation, the actual result, the immediate action and who was informed. Attach useful evidence where safe and permitted. A photograph supports a finding without establishing its cause.

  1. Keep the original observation and time.
  2. Assign a specific next action and agree when it will be reviewed.
  3. Record the later outcome and authorised verification beside the finding.

Read the guide to writing a useful fault report for a closer look at the evidence record.

Review the work still needing attention

Review shared-equipment findings across counters, not only by the person who submitted them. Check whether closing exceptions reach the next opening team and whether a routine has unclear ownership. Repeated missing submissions at changeover may require a clearer assignment or due window rather than a longer checklist.

Review completion and outstanding actions together. A missing routine and a completed routine with a failure need different follow-up. The weekly manager review guide explains how to move from the summary to the source record.

Try the routine in CheckControl

Start with an existing routine, add its questions and instructions, and agree the assignment and due window. Staff can record answers and findings on their phones; managers can review the record and follow-up. Use the relevant PDF or Excel export for your authorised review. The public demo uses fictional people, findings and evidence.

Common questions

How should a deli handle shared equipment checks?

Give the routine one clear assignment, use the same asset reference in findings, and make the current restriction and next action visible to every affected counter.
